It is filled with three layers of foam forming,one a thicker layer of foam wrapped in plastic foil for impact absorption(one of the advantages of the burrito system is that when folded the damp dirty surface of the mat), two layers of high density foam.
The adventages are that the tougher high density layers spread the force of the landing climber on the top side and also helps lessen the effects of uneven ground/rocks on the underside.
